Pumpkin Pie Dip

Erickyp gives Lori at SeriouslyBecause.com a hard time whenever she posts recipes on her blog.  So when he suggested I post this recipe on my blog, you KNOW I was not only going to do it, but also be sure everyone knew I was doing it at his special request.  So Erickyp, here’s your dip, chip!

Oh, and for the rest of you…this is really good stuff.  It only takes a few minutes to put it together…and even less to eat it.  It’s a great way to sneak some extra vitamins and fiber into your diet, too.  Sorry I don’t have a photo.  The stuff was devoured too quickly the last time I made it.  I didn’t have time!

 

Pumpkin Pie Dip

1  80z. package of cream cheese (light is fine, and in fact I prefer it)

2  cups powdered sugar

1  15oz can pumpkin

1  1/2 tsp pumpkin pie spice

With an electric mixer, beat cream cheese and sugar until smooth.  Add pumpkin and spices; beat well.  Cover and chill for 8 hours or as long as you can stand it (it’s pretty good after, oh, say five minutes).  Garnish with a light sprinkle of cinnamon if you want.

Serve with gingersnaps and apple slices for dipping.  Any apple variety you like will work, but Granny Smith are particularly good because the tart of the apple is a great complement to the smooth sweetness of the dip.
